ROARING DRAGON CUPCAKES

With vibrant colours and flavours that ignite the senses, our Roaring Dragon Cupcakes! ๐Ÿ‰๐Ÿ”ฅpromise to be the highlight of your celebration! And don't worry, making them gluten-free is as simple as swapping the flour, ensuring everyone can enjoy a bite of this mythical delight!๐Ÿง

Get ready to impress with a batch of cupcakes that are as bold and beautiful as the dragons they're inspired by!โฌ‡๏ธ

Ingredients

Cupcakes

  1. 150g unsalted butter, softened

  2. 150g ZUKR, powdered

  3. 3 eggs

  4. 120g self-raising flour

  5. 30g cocoa powder

  6. 1 tsp baking powder

  7. 2 tsp vanilla extract

  8. 2 tbsp Greek yogurt

Green Vanilla Frosting

  1. 200g unsalted butter, softened

  2. 400g ZUKR, powdered

  3. 2 tsp vanilla extract

  4. 2 tbsp milk

  5. Green food colouring

Topping

  1. 12g freeze-dried mango, crumbled

โณ Prep Time: 60 mins

๐Ÿ“Š Approximately 192 calories 

๐Ÿง Servings: 16 servings

Instructions

  1. Preheat oven to 180ยฐC (350ยฐF). Line muffin tin with liners.

  2. Cream butter and ZUKR until fluffy.

  3. Mix in eggs one at a time, then vanilla.

  4. Sift in flour, cocoa, and baking powder; fold in.

  5. Add Greek yoghurt to the batter.

  6. Fill liners evenly; bake 18-20 mins. Cool on the wire rack.

Green Vanilla Frosting

  1. Beat butter until creamy. Gradually add ZUKR, then vanilla and milk.

  2. Colour with green food colouring.

  3. Frost-cooled cupcakes.

Topping

  1. Sprinkle with mango.
