½ tsp ground ginger
Pinch of nutmeg & sea salt
Optional: chopped walnuts, sultanas, or orange zest
Frosting:
100g full-fat cream cheese
2 tbsp softened butter
50g ZUKR, powdered
½ tsp vanilla paste or extract
Optional: lemon zest or a drop of almond extract
Method
Preheat oven to 170°C (fan). Line a square baking tin with parchment.
In a bowl, whisk ZUKR, eggs, vanilla, and oil until light.
Stir in grated carrot.
In another bowl, sift together flour, baking agents, spices, and salt.
Fold dry into wet until just combined. Add extras now if using.
Pour into tin and bake 25–30 minutes, or until springy.
Cool completely before frosting.
For frosting: Beat all ingredients until smooth and dreamy. Chill briefly for spreading ease.
