Following our exploration of healthier Halloween treats, let's dive into a spooktacular recipe that's sure to impress at your festive gatheringsāintroducing āNabilaās Halloween Pumpkin Spiced Cupcakes" ā a treat that combines the thrill of Halloween with a healthier twist. š
Serves 12 - Per Cupcake | 224 calories |1.33 grams of net carbs
Ingredients:
For the Cupcakes:
180g almond flour
80g ZUKR (organic erythritol), for sweetness
1 teaspoon (about 4g) baking powder
Ā¼ teaspoon (about 1g) salt
3 large eggs
75g unsalted butter, melted (or coconut oil for a dairy-free version)
3 tablespoons pumpkin purƩe
1 teaspoon (5ml) vanilla extract
1 teaspoon ground cinnamon
Ā½ teaspoon ground nutmeg
Ā½ teaspoon ground ginger
Optional: Ā¼ teaspoon ground cloves for extra spiciness
Mascarpone Topping Ingredients:
1 tub (250g) mascarpone cheese
100ml heavy cream
50g ZUKR (organic erythritol), powdered (Top Tip: Blend the ZUKR in a smoothie maker to achieve a fine, powdered consistency) Instructions: To Make the Mascarpone Topping: Enjoy your delicious pumpkin almond flour cupcakes with creamy mascarpone toppingā perfect for Halloween or any fall occasion!
Ā½ teaspoon vanilla bean powder or vanilla extract
Directions:
Preheat the Oven: Preheat the oven to 180Ā°C (160Ā°C fan) or 350Ā°F. Line a muffin tin with cupcake liners.
Mix Dry Ingredients: In a large bowl, whisk together almond flour, ZUKR, baking powder, salt, cinnamon, nutmeg, ginger, and cloves (if using).
Combine Wet Ingredients: In another bowl, whisk eggs, melted butter, pumpkin purƩe, and vanilla extract until smooth.
Combine Mixtures: Stir the dry ingredients into the wet mixture until well combined. Let the batter sit for a few minutes to thicken.
Fill Liners: Divide the batter among the cupcake liners, filling each about Ā¾ full.
Bake: Bake for 20ā25 minutes, or until a toothpick inserted in the centre comes out clean.
Cool: Let the cupcakes cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
To Make the Mascarpone Topping:
Blend the ZUKR: Blend the ZUKR in a smoothie maker or high-speed blender until it reaches a powdered consistency. This will give the frosting a smoother texture.
Mix Topping Ingredients: In a bowl, combine the mascarpone cheese, heavy cream, powdered ZUKR, and vanilla bean powder or extract. Mix until smooth and creamy.
Frost the Cupcakes: Once the cupcakes are fully cooled, spread or pipe the mascarpone topping onto each cupcake.
