Introducing our Chai-Spiced ZUKR Muffins—a delicious way to embrace the warming flavors of chai without any added sugar! These muffins are perfect for a morning treat or an afternoon pick-me-up, giving you a burst of flavor with every bite.
Ingredients (makes 10–12 muffins)
200g plain flour (or GF blend)
2 tsp baking powder
½ tsp bicarb soda
Pinch of sea salt
1½ tsp ground cinnamon
1 tsp ground cardamom
½ tsp ground ginger
¼ tsp ground cloves
100g ZUKR
2 eggs
200ml milk (any kind)
100ml neutral oil or melted butter
1 tsp vanilla extract
Optional: chopped dates, walnuts, or pear chunks
Method
Preheat oven to 180°C (fan). Line a muffin tin.
In one bowl: whisk flour, baking agents, spices, and salt.
In another: whisk ZUKR, eggs, milk, oil, and vanilla.
Combine wet and dry until just mixed (lumps = good).
Fold in extras if using.
Divide into muffin cases and bake for 18–20 min until golden and springy.
