2 cups rolled oats
1 cup almond flour
1/4 cup ZUKR
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/3 cup melted coconut oil
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1/2 cup dried fruits (raisins, cranberries, or chopped apricots)
1/4 cup chopped nuts (optional)
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, ZUKR, baking soda, salt, and cinnamon. Stir until well mixed.
Combine Wet Ingredients: In another bowl, whisk together the melted coconut oil, honey or maple syrup, and vanilla extract.
Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until combined. Fold in the dried fruits and nuts, if using.
Bake: Pour the mixture into the prepared baking dish and press down evenly with a spatula. Bake for 20-25 minutes or until the edges are lightly browned.
