Sugar-Free Welsh Cake Made with ZUKRπ

Believe us, today's recipe is a wonderful treat that's perfect for ANY family occasion πͺπ¨βπ©βπ§βπ¦
NO-BAKE LEMON CHEESECAKE
What could embody this spirit more than a zesty, creamy No-Bake Lemon Cheesecake? π°πΏ
With our No-Bake Lemon Cheesecakeβs smooth, tangy filling and crumbly, sweet base, it promises to be a hit among both the young and the young at heartπ
P.S. With ZUKR, it's a guilt-free indulgence you can feel good about sharing!!π
Ingredients
For the base:
150g mixed nuts
100g melted unsalted butter
60g ZUKR
For the filling:
500g cream cheese, softened
120g ZUKR
240ml heavy cream
Zest and juice of 2 lemons
1 tsp vanilla extract
Prep Time: 20 mins β³
Approximately 450 calories π
Servings: 12 Servings π₯£
Instructions
Powder ZUKR in a blender. Set aside.
Pulse mixed nuts in blender until finely ground; mix with melted butter and powdered ZUKR.
Press nut mixture into a 9-inch spring form pan, and chill.
Beat cream cheese and powdered ZUKR until creamy.
Whip heavy cream to stiff peaks; fold into cream cheese.
Stir in lemon zest, juice, and vanilla.
Spread filling over chilled base, smooth top.
Chill the cheesecake for 6 hours or overnight.
Serve from a spring form pan, and garnish with lemon or berries if desired.
