MAGICAL UNICORN CUPCAKES

To make this Father's Day memorable, we’ve included a special recipe that’s perfect for the occasion- Magical Unicorn Cupcakes!!

❎These are not only delicious but also Dad-approved for their health-friendly twist ☑️ Try them out this Father’s Day and show dad how much you care by catering to both his palate and his health!!

Ingredients

Cupcake Ingredients:

  1. 150g unsalted butter

  2. 150g ZUKR (powdered)

  3. 3 eggs

  4. 1 tbsp Greek yogurt

  5. 150g self-raising flour

  6. 1 tsp baking powder

  7. 2 tsp vanilla extract

  8. Pink, purple, blue food colouring (optional)

Frosting Ingredients:

  1. 100g unsalted butter

  2. 100g cream cheese

  3. 400g ZUKR (powdered)

  4. 2 tsp vanilla extract

  5. 2 tbsp milk

  6. Mango (or choice fruit) for horn, coloured (optional)

Prep Time: 60 mins ⏳

Approximately 185 calories 📊

Servings: 16 servings 🥣

Instructions

  1. Preheat oven to 180°C (350°F), line muffin tin with liners.

  2. Make a batter of Cream butter and ZUKR. Add eggs, and vanilla, fold in flour, and mix in yoghurt. Divide into liners.

  3. Bake for 18-20 mins until done. Cool in the tin for 5 mins, then on the rack.

  4. Beat butter, cream cheese, add ZUKR, vanilla, milk. Colour if desired.

  5. Frost cupcakes, and add fruit horn colouring if using.

So, let's tie our aprons, preheat our ovens, and sprinkle and make some Gluten-Free Unicorn Cupcakes! 🎨🧁
