Ingredients for the Cake:
200g (1 cup) ZUKR (ground to a powder)
200g (1¾ cups) self-raising flour
50g (½ cup) cocoa powder
1 tsp baking powder
4 large eggs
200g (7/8 cup) butter, softened
200ml (¾ cup) milk
For Salted Caramel Whipped Cream:
300ml (1¼ cups) double cream, chilled
75g (â…“ cup) ZUKR (ground to a powder)
2 tbsp sugar-free salted caramel sauce
Pinch of sea salt
Prep Time: 20 minutes active, 30 minutes baking | Approximately 282 kcal per serving | Servings: 12 slices
Directions:
Preheat the oven to 180°C/350°F/Gas Mark 4. Grease and line two 8-inch round cake tins.
Cream butter and powdered ZUKR until fluffy. Beat in eggs one at a time, ensuring each one is fully incorporated before adding the next. Fold in the dry ingredients (flour, cocoa powder, and baking powder) and milk.
Bake for 25–30 minutes, or until a skewer comes out clean. Allow the cakes to cool completely.
Make the whipped cream: In a chilled bowl, whip the cream with powdered ZUKR, caramel sauce, and sea salt until stiff peaks form.
Layer the cakes: Spread the salted caramel whipped cream between the layers and on top of the cake. Garnish with additional sea salt for that perfect balance of sweet and savoury.
