Recipe of the Week: Rose & Raspberry Tea Loaf with ZUKR

A gentle, floral bake that celebrates change, softness, and sweetness—without the sugar crash.

Ingredients:

  • 200g plain flour (or gluten-free blend)

  • 100g ground almonds

  • 100g ZUKR

  • 1½ tsp baking powder

  • ½ tsp bicarbonate of soda

  • ¼ tsp sea salt

  • 2 eggs

  • 100ml plant milk (e.g. oat or almond)

  • 80ml olive oil or melted butter

  • 1 tsp vanilla extract

  • 1 tbsp rosewater (food grade)

  • Zest of 1 lemon

  • 100g fresh or frozen raspberries (plus extra for topping)

  • Optional: dried edible rose petals for garnish

Method:

  1. Preheat and Prepare: Preheat your oven to 170°C (fan). Line a 1lb loaf tin with parchment paper.

  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, ground almonds, ZUKR, baking powder, bicarbonate of soda, and sea salt.

  3. Combine Wet Ingredients: In a separate bowl, whisk the eggs, plant milk, olive oil, vanilla extract, rosewater, and lemon zest.

  4. Fold Carefully: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the raspberries.

  5. Bake to Bloom: Pour the batter into your prepared tin. Scatter a few extra raspberries and rose petals on top, if desired.

  6. Cool & Reflect: Bake for 40–45 minutes, until golden and springy. A skewer inserted into the center should come out clean. Let the loaf cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
