As we continue our journey through sustainable eating and sugar-free living, let's dive into a delightful treat that captures the essence of seasonal freshness: our recipe of the week! This time, we’re baking Strawberry and Blueberry Muffin Cupcakes, topped with luscious whipped cream. Perfect for any occasion, these cupcakes are not only gluten-free and nut-free but also use our very own ZUKR to ensure they're guilt-free too. Here’s how you can whip up these delectable treats:
Ingredients:
Gluten-Free Self-Raising Flour: 225g (8 oz / 1 3/4 cups)
ZUKR: 150g (5.3 oz / 3/4 cup), ground to a powder
Gluten-Free Baking Powder: 2 tsp (10g)
Salt: 1/2 tsp (2.5g)
Unsweetened Oat Milk: 120ml (4 fl oz / 1/2 cup)
Vegetable Oil: 120ml (4 fl oz / 1/2 cup)
Vanilla Extract: 2 tsp (10ml)
Eggs: 2 large, beaten
Fresh Strawberries: 150g (5.3 oz / 1 cup), chopped
Fresh Blueberries: 150g (5.3 oz / 1 cup)
For the Whipped Cream Topping:
Heavy Whipping Cream: 300ml (10 fl oz / 1 1/4 cups)
ZUKR Powdered Icing Sugar Replacement: 100g (3.5 oz / 1/2 cup)
Vanilla Extract: 1 tsp (5ml)
Prep Time: 55 mins | Approximately 240 calories | Servings: 16 servings
Directions:
Prep: Preheat your oven to 180°C (350°F). Line a 16-hole muffin tin with cupcake liners.
Mix Dry Ingredients: In a large bowl, combine the flour, powdered ZUKR, baking powder, and salt.
Mix Wet Ingredients: In another bowl, whisk together oat milk, oil, vanilla, and eggs.
Combine: Pour wet ingredients into dry, mixing until just combined. Fold in strawberries and blueberries.
Bake: Divide batter among liners. Bake for 20-25 minutes or until a toothpick comes out clean. Cool in tin for 5 mins, then on a wire rack.
Make Topping: Whip cream to soft peaks, add ZUKR icing sugar, and whip to stiff peaks. Mix in vanilla.
Decorate: Once cooled, top cupcakes with whipped cream.
