Ingredients
For the crumble base + top:
200g plain flour (or GF blend)
100g ground almonds
100g ZUKR
1 tsp ground cinnamon
½ tsp mixed spice or nutmeg
Pinch of salt
200g cold unsalted butter, cubed
For the filling:
300g sugar-free mincemeat (or homemade – happy to share a recipe!)
Zest of 1 clementine
Optional: splash of brandy, chopped nuts, or extra dried cranberries
Method
Preheat oven to 170°C (fan). Line a square baking tin.
Mix flour, almonds, ZUKR, spices, and salt. Rub in butter with fingertips until it resembles coarse crumbs.
Press ⅔ of the mix into the tin. Bake for 10 mins.
Stir zest and extras into mincemeat. Spread over the base.
Sprinkle remaining crumble over the top.
Bake 25–30 mins until golden. Cool completely before slicing.
Storage & Make-Ahead Tips
Keeps 5–6 days in a tin
Freezes beautifully: slice, wrap in parchment, and freeze in an airtight box
Great for gifting: pack into waxed paper bags with a little note: "Sweet without sugar. Merry without crash."
