These ultra-fudgy brownies are packed with antioxidant-rich cacao, mood-lifting magnesium, and just enough sweet rebellion to say “I love you” without a crash.
Ingredients
200g medjool dates (pitted and soaked in hot water for 10 minutes)
2 eggs
80g ZUKR
100g almond butter or tahini
40g cacao powder
60g ground almonds
1 tsp vanilla extract
1/2 tsp sea salt
Optional: 50g dark chocolate chunks or chopped walnuts
Method
Preheat your oven to 170°C fan / 190°C conventional. Line a square tin with parchment paper.
Blend the soaked dates into a smooth paste.
In a mixing bowl, whisk the eggs, ZUKR, almond butter, vanilla extract, and date paste until smooth and well combined.
Stir in the cacao powder, ground almonds, and sea salt. If using, fold in the dark chocolate chunks or chopped walnuts.
Pour the mixture into the prepared tin, smoothing the top evenly. Sprinkle a little flaky sea salt on top if desired.
Bake for 22–25 minutes, until the edges are set but the center remains fudgy.
Allow the brownies to cool completely before slicing them into decadent squares.
