Ingredients
200g unsalted butter, softened
200g ZUKR (our sugar replacement that bakes like the real thing)
4 eggs
Zest of 2 lemons
Juice of 1 lemon
1 tbsp dried culinary lavender (crushed gently with fingers)
200g self-raising flour (gluten-free works too)
1 tsp baking powder
A splash of vanilla extract
A pinch of sea salt
Optional glaze (for extra shine & sass):
100g ZUKR powdered (blitz in a blender if needed)
Juice of ½ lemon
A few drops of lavender water (or infuse with a bud or two)
Method
Preheat your oven to 180°C (fan 160°C). Line a loaf tin or 8” cake tin with baking paper.
Cream butter and ZUKR until light and fluffy — this is where the magic starts.
Beat in the eggs one by one, adding a spoonful of flour if it starts to curdle.
Stir in lemon zest, juice, vanilla, and lavender.
Fold in the flour, baking powder, and salt until just combined. No over-mixing here — we want tender, not tough.
Pour into your tin, level the top, and bake for 40–45 minutes until golden and a skewer comes out clean.
Cool. Drizzle with the lemon-lavender glaze if you’re feeling extra. Sprinkle a little more zest and a few lavender buds. Serve barefoot in the garden.
