Recipe of the Week: Lemon Bliss Bars
This week, we're creating a delightful ZUKR-infused dessert that's both satisfying and easy to make.
Lemon Bliss Bars
Ingredients:
1 cup almond flour
1/4 cup coconut flour
1/2 cup unsalted butter, melted
1/4 cup ZUKR
2 large eggs
Zest and juice of 2 lemons
1/2 teaspoon vanilla extract
A pinch of salt
Powdered ZUKR for dusting (optional)
Instructions:
Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
Prepare the Crust: In a medium mixing bowl, combine the almond flour, coconut flour, melted butter, and half of ZUKR. Mix until well incorporated. Press the mixture firmly into the bottom of the prepared baking pan to form the crust.
Bake the Crust: Place the pan in the oven and bake for about 10 minutes, or until the edges are lightly golden. Remove from the oven and let it cool slightly.
Make the Filling: In another bowl, whisk together the eggs, remaining ZUKR, lemon zest, lemon juice, vanilla extract, and salt until smooth. Pour this mixture over the cooled crust.
Bake the Bars: Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and the top is lightly golden.
Cool and Serve: Let the bars cool completely in the pan, then refrigerate for at least 1 hour before cutting into squares. Dust with powdered ZUKR before serving if desired.
