Celebrate Thanksgiving with a delightful No-Bake Lemon Cheesecake that's not only easy to make but also a refreshing treat perfect for sharing gratitude with loved ones!

Ingredients:

For the Base:

  • 150g (5.3 oz / 1 1/2 cups) mixed nuts (such as almonds, walnuts, and pecans)

  • 100g (3.5 oz / 7 tbsp) unsalted butter, melted

  • 60g (2.1 oz / 1/3 cup) ZUKR

For the Cheesecake Filling:

  • 500g (17.6 oz / 2 1/4 cups) cream cheese, softened

  • 120g (4.2 oz / 2/3 cup) ZUKR

  • 240ml (8 fl oz / 1 cup) heavy whipping cream

  • Zest and juice of 2 lemons

  • 1 tsp (5ml / 0.17 fl oz) vanilla extract

Prep Time: 20 mins | Approximately 450 calories | Servings: 12 servings

Directions:

  1. Prepare the Base: In a smoothie maker or blender, grind the ZUKR into a fine powder and set aside. Then, add the mixed nuts and pulse until they resemble ground biscuits. Transfer to a bowl.

  2. Mix Base Ingredients: Combine the ground nuts with the melted butter and powdered ZUKR until the mixture resembles wet sand. Press this mixture into the bottom of a 9-inch (23 cm) springform pan to create an even layer. Refrigerate while preparing the filling.

  3. Make the Filling: In a large mixing bowl, beat the softened cream cheese and powdered ZUKR until smooth. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.

  4. Add Flavour: Mix in the lemon zest, lemon juice, and vanilla extract until well combined.

  5. Assemble: Pour the cheesecake filling over the chilled nut base, smoothing the top with a spatula. Refrigerate for at least 6 hours or overnight until set.

  6. Serve: Carefully remove the cheesecake from the springform pan and transfer it to a serving plate. Optionally, garnish with lemon slices or fresh berries.
